How to track down missed collectibles using the compass:

Since update 1.0.3, the compass now enables you to hone in on collectables 
that you missed. The compass is displayed in the bottom right corner of 
the screen while sand-surfing, and you can also summon it to be visible at
all times by pressing D-Pad down.

By default, it simply points north. However, once you pass certain thresholds, 
it will alert you to collectables that you missed:

* Once you’ve collected at least 17 fish, the dead fish skeleton in the 
  compass will begin pulsing faster and faster when nearing a fish
* Once you’ve collected at least 480 coins, the large orb in the compass 
  will begin pulsing faster and faster when nearing a coin.
